Strawberry Lemonade

1 can frozen lemonade concentrate
1 can water
3 can of Meadow Lynn Strawberry Juice 

Mix and chill. Makes a refreshing drink with the goodness of strawberries. For a fun summer adult cocktail, add shot of Silver Lake Vodka. 





Strawberry Shooters

1 quart large strawberries
1 cup strawberry juice
1 package lemon Jell-O 
1 cup silver lake vodka
Coarse sugar & Lime slices

Cut a small piece off bottom of strawberry so it will sit flat. Remove hull and carefully core out centre of berry leaving some for a bottom. Mix Jell-O and one cup boiling strawberry juice. Stir  and let cool for 15 min. Add vodka and stir. Allow to cool. Wet top rim of strawberry with some Jell-O mixture & dip into sugar. Carefully spoon Jell-O into strawberry shooter cups. Add small wedge of lime. Chill until set. 


Strawberry Mint Salad

2 quarts of strawberries hulled & quartered
1/2 c sour cream or vanilla yogurt
2 tablespoons brown sugar
pinch of cinnamon
fresh mint or essence of mint to taste
Coat berries; serve cold
(Don't overdress the berries)




Strawberry Burritos

4 soft 10-inch flour tortillas
1 lb of fresh strawberries
1/4 cup granulated sugar
1 cup of confectioner's sugar (estimate)
3 cups of sweetened whip cream (estimate)
1-2 tbsp of Amaretto (optional) 
Cinnamon to taste (optional)
Rinse, hull and slice strawberries and place them into a bowl. Mix strawberries with 1/4 c of sugar and stir to blend. Allow to sit in the refrigerator for 1 hr. Then, take a most paper towl and dab it across both sides of the tortilla, making it damp. Take 1/4 of the sugared berries and place in the middle of the tortilla. Fold up bottom edge and roll up sideways, like a burrito. Place on serving plate and cover with whipped cream and more confectioner's sugar and cinnamon if desired. Repeat with the other three burritos. Serve immediately. 

Chilled Strawberry Soup

4 cups strawberries
1/3 granulated sugar
1 cup sour cream, well chilled
1-1/2 cup ice water
1 cup Burning Kiln Chardonnay

Puree strawberries in food processor or blender. Add sugar and sour cream. Mix well. Add water and wine, Chill for at least one hour. Garnish with mint leaves and a dollop of whipped cream.

Or 
Use strawberry juice instead of berries and omit the ice water

Strawberry Slush

1 can cream of coconut
1 can pineapple juice
1/2 can water
26 oz. of Rum 
4 quarts of pureed strawberries

Mix ingredients and place in freezer for 12 hours. Scoop into glass (1/2 full). Add 7-Up. Sprite or Soda 


Strawberry Fruit Pizza

Crust 
1 1/4 cup all purpose- flour 
1/3 cup brown sugar
3 tablespoons icing sugar
2/3 cup butter, softened

Topping
12 oz. cream cheese softened
1/2 cup granulated sugar
1 teaspoon vanilla 
Variety of fruit 
Whipped cream for garnish 

Crust: Mix all four ingredient together in a bowl until it forms a ball. Press on bottom of pizza pan. Bake at 350 degrees for about 10- 15 min. Cool. Topping: Beat cheese, sugar & vanilla together. Spread over crust. Arrange fruit in patten of your choice over top. Garnish around edge with whipped cream if desired.


Strawberry Daiquiris

6 tablespoons/ 90 ml of light rum
1/4 cup (50 ml) lime juice
2 tablespoons sugar
2 cups of frozen whole strawberries, partly thawed

Combine run, lime juice and sugar in a blender. Blend to dissolve sugar. Add partly thawed strawberries and blend until smooth. Serves 2. 

Strawberry Vinegrette


If you don't have our Strawberry Syrup - you can substitute pureed berries and keep refrigerated 
Strawberry Vinaigrette
1/4 c olive oil
1/4 cup balsamic vinegar
tsp dijon mustard
chopped green onion(2)
1/3 cup strawberry syrup
blend


Strawberry Spinach Salad
spinach leaves
1/3 c almonds raw chopped 
i cup strawberries chopped 
1/4 c red onion
add dressing to taste

Strawberry Nachos

Serves 6
3 cups slices fresh strawberries
1/4 cup sugar
1/4 cup almond flavoured liqueur or tsp almond extract
3/4 cup sour cream
2 tablespoons sugar
1/4 teaspoon cinnamon
6 6-inch flour tortillas
2 tablespoons melted butter
2 teaspoons sugar
1/4 teaspoon cinnamon 
2 tablespoons sliced almonds, toasted
1 tablespoon shaved semi-sweet chocolate

Combine: Strawberries, 1/4 c sugar, liqueur in a bowl; stir. Cover, refrigerate for 1 hr. Combine sour cream, 2 tbsp sugar and 1/4 cinnamon in small bowl; stir well. Cover and refrigerate. Preheat oven to 400 degree. Using pastry brush, lightly brush one side of tortilla with melted butter. Cut each tortilla into 6 wedges and arrange on 2 ungreased baking sheets. Sprinkle wedges evenly with 2 tsp sugar and 1/4 tsp cinnamon. Bake for 6-8 min, or until crisp. Remove from oven and cool. Drain strawberries. Place 6 wedges on each dessert plate. Top each wedges with strawberries and a little sour cream mixture. Sprinkle toasted almonds and shaved chocolate evenly among nachos.
