How to Store & Freeze

Sort and remove any bruised or damaged berries as soon as possible and use in sauces, purees or jams. Place berries in cool, well ventilated containers. The moisture content of Ontario strawberries is high, so store uncovered or loosely covered. Hull strawberries just before serving.
Berries can be frozen and packed individually if desired. To do this, place a single layer of strawberries on flat trays and put in the freezer. Once frozen, place in freezer bags, seal, label and date. 
To freeze for jams or other uses without sugar, fill containers with washed & sliced berries, combine 4 cups of water with 1 tbsp of lemon juice and pour over berries before freezing. Seal, label and date.
